🧿 GREEK BOWL MAGIC with Leftovers + Mama Millie’s Lemon Rice 🍋✨

ingredients

  • 1 cup long grain rice
  • 2 cups water or broth
  • 1 tbsp butter
  • 1 tsp salt
  • Zest + juice of 1 or maybe 2 lemons (depending on how strong the lemon is)
  • 1 garlic clove (optional)
  • Chopped parsley or dill (garnish)
  • To make:
  • Rinse rice until water runs clear. Add everything (except lemon juice & herbs) to the rice cooker. Use white rice setting. Once done, let sit 5 mins, fluff, stir in lemon juice and additional lemon zest.

  1. 1 Heat a pan on the stove and add the roasted vegetables.
  2. 2 Dice the leftover grilled chicken and add it to the pan.
  3. 3 Sprinkle the Weber Mediterranean seasoning over the chicken.
  4. 4 Add water to the pan and let it simmer.
  5. 5 Chop the cucumber while the chicken and vegetables are cooking.
  6. 6 In a bowl, combine arugula, olive oil, lemon juice, salt, and pepper for the base.
  7. 7 Assemble the Greek bowl by adding the cooked chicken, roasted vegetables, cucumber, tomatoes, hummus, tzatziki sauce, and any optional toppings like feta cheese, pepperoncinis, or pickled onions.
