This Island Pork Tenderloin is a family favorite—sweet, savory and a little spicy. Perfect for weeknight dinners, meal prep, or when you need something that feels gourmet but is secretly simple.

  • Start with 2 ½ lb pork tenderloin (Costco’s shrink-wrapped pack works great—just use half!)
  • Sear in 3–4 Tbsp coconut oil.
  • Coat with a rub: 2 tsp salt, ½ tsp pepper, 1 tsp each cumin, chili powder, and cinnamon.
  • Finish with the glaze: 1 cup brown sugar, 2 Tbsp garlic, and 1 tsp hot sauce (adjust if cooking for kids).

  1. 1 Make a rub with salt, pepper, cumin, chili powder, and cinnamon.
  2. 2 Heat coconut oil in a frying pan on the stove.
  3. 3 Rub the spice mixture all over the pork tenderloins.
  4. 4 Brown the tenderloins on both sides for a couple of minutes.
  5. 5 Clear your cutting board.
  6. 6 Make a glaze by mixing brown sugar, crushed garlic, and sriracha.
  7. 7 Place the browned tenderloins in the crock pot.
  8. 8 Dump the remaining coconut oil on top of the tenderloins.
  9. 9 Add 1 to 2 cups of water to the crock pot.
  10. 10 Cook on high for 4 to 5 hours or on low for 8 hours.
  11. 11 Serve over coconut sticky rice and enjoy.
