  • 1 box lemon cake mix (13.25 oz)
  • 1 small pkg (3.4 oz)
  • instant lemon pudding
  • 1 cup sour cream
  • ½ cup salted butter, melted
  • ¼ cup water
  • ¼ c lemon juice, fresh is best
  • 4 eggs
  • 1½ cups fresh blueberries
  • 1 Tbsp flour (for coating berries)
  • Frosting:
  • 8 oz cream cheese (softened)
  • ½ cup salted butter (softened)
  • 1 tsp vanilla
  • 2-3 cups powdered sugar

directions

  1. 1 Preheat oven to 350°F and generously spray a Bundt pan.
  2. 2 Mix all cake ingredients on low 30 seconds, then medium 2 minutes.
  3. 3 Toss blueberries with flour, then gently fold into the batter.
  4. 4 Pour into prepared pan and smooth the top.
  5. 5 Bake 45–55 minutes, or until a long skewer comes out clean.
  6. 6 Let rest 5 minutes, then invert and cool completely.
  7. 7 Mix frosting ingredients, beating for at least 3-5 minutes.
  8. 8 Pipe frosting using a ziplock bag or a disposable piping bag with the tip cut off.
