  • 2 cups water
  • 3 pieces salmon
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon honey
  • 1/2 teaspoon pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 4 ounces rice noodles
  • 1 cup broccoli
  • 1 cup edamame

directions

  1. 1 Boil 2 cups of water in a saucepan with the lid on.
  2. 2 Drizzle olive oil over 3 pieces of salmon and season with salt, garlic powder, paprika, honey, and pepper. Stir to coat well.
  3. 3 Preheat air fryer to 400°F.
  4. 4 Place the seasoned salmon in the air fryer and cook for 12 minutes.
  5. 5 Once the water is boiling, add 4 ounces of rice noodles and set a timer for 4 minutes.
  6. 6 Stir the noodles after 4 minutes and cook for an additional 4 to 7 minutes.
  7. 7 Add 1 cup of broccoli to the noodles with about 2 minutes left of cooking time.
  8. 8 Strain the noodles and broccoli.
  9. 9 Microwave 1 cup of edamame for 3 minutes as a side dish.
  10. 10 Check the salmon; it should be done.
  11. 11 Top the noodles with the cooked salmon and add a little sauce if desired.
  12. 12 Store any leftovers in a container for lunch or dinner the next day.
